Nourish November: November 19- Try a Green Smoothies

Green smoothies are a great way to get servings of fruit and vegetables. I like to start my day with one, but they are delicious any time of the day. The best part is that they taste like the fruit you add, and you really don't taste the greens.

Here is an easy recipe:

  • 1 cup of fresh spinach (you can substitute in kale)

  • 1/2 cup of plain Greek yogurt (or your choice of yogurt)

  • 1/2 cup unsweetened crushed pineapple in juice

  • 1/2 - 1 cup of your choice of fruit (I like to use frozen strawberries and/or assorted mixed frozen fruit)

  • A few ice cubes if not using frozen fruit

  • Combine all of the above in the blender and add a splash of your choice of milk or juice.

To make things easier, you can combine all of the above except for the liquids in a blender and place in your fridge overnight. In the morning, you can add the liquid and some ice and blend. I don't use ice if I'm making this right away because the frozen fruit makes the smoothie cold. You can also plan ahead and portion several containers of the frozen fruit in the amounts you need or freeze ripe bananas to use.

Green smoothies offer protein, vitamins, and minerals, and you can make them into your own. You can add in peanut or almond butter or make other changes. I like to use pineapple because I think the sweetness balances the spinach taste. Invest in yourself by making this healthy smoothie part of your week.
